A One Health Approach to Addressing Food Safety Issues.

Over the last few decades, there has been a dramatic increase in the consumption of fresh produce in the U.S., which has led to produce becoming the number one source of foodborne outbreaks. Produce safety represents a major One Health matrix, classically characterized in 2018 by the largest Escherichia coli O157:H7 outbreak in U.S. history. This outbreak involved a large cattle feedlot and irrigation water canals that were used to irrigate romaine lettuce fields, and resulted in 210 illnesses, 96 hospitalizations, and 5 deaths.
